Every year the vineyards of the
world bring forth many million gallons of wines, and
all of them differ from one another either in color,
alcoholic strength, taste, style, 'bouquet ', 'body'
and 'appeal'. Be they great or ever so slight, these
differences are important since they are responsible
for the individuality of wines: they are due to
differences in:
1. the species of grapes and the
geological formation of the soil of the vineyards;
2. the weather, that is the
incidence of rain and sunshine each year;
3. the yeast, or microscopic
fungi which form the ' bloom ' on ripe grapes;
4. the technique of the men who
press the grapes, and control the fermentation of
their sweet juice into wine;
5. the care, the skill, and the
means of the vintners who nurse the new wine until
it is fit to be shipped;
6. the integrity and
professional ability of those who import and attend
expertly to wine until it is ready to drink;
7. the intelligence and
experience of whomsoever will eventually serve our
wine under the most favorable conditions.
